Have you ever made something so good that it completely blowed your mind and as you eat, you’re asking yourself, how have I not made this sooner? Well, that’s how I feel about this apple pie recipe. It’s a classic American style pie with double crust made with a couple of special ingredients such as nutmeg, ginger and brown sugar. It is perfect for September gatherings and pre-fall picnics.
Ingredients
1/2 cup sugar
1/2 cup packed brown sugar
3 tbsp. all-purpose flour
1 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
6 to 7 cups thinly sliced peeled tart apples
1 tbsp. lemon juice
1 tbsp. butter
1 large egg white
Additional sugar to sprinkle
Pastry for double crust pie (can be bought in store in the US but is also really easy to make on your own using THIS recipe. Beware that the dough has to be refrigerated for an hour before you use it.
How to make the pie
In a small bowl, combine the sugars, flour and spices. Set aside. In a large bowl, toss apples with lemon juice. Add sugar to mixture and toss to coat.
Line a 9-in. pie plate with bottom crust, trim pastry even with edge.Fill with apple mixture and dot with butter. Roll out remaining pastry to fit top of pie. Place over filling. Trim, seal and flute edges.Using a sharp paring knife, cut slits in top of pastry.
Beat egg white until foamy, brush over pastry. Sprinkle with sugar. Cover edges loosely with foil.
Bake at 375 F/190 C for 25 minutes. Remove foil and bake 20-25 minutes longer or until crust is golden brown and filling is bubbly. Cool on a wire rack.
Both the pie and the crust are really easy to make. The trickiest part is fitting and pushing in the dough into the pie plate, so try to be a little bit patient with this part.
I recommend serving the pie with vanilla ice cream. The combination of hot apple pie and ice cold vanilla ice cream is unbeatable.
